At Nocturne, it's never just about the meal. It's the music, the lighting, the pacing - the quiet understanding that you're stepping into something international. Something built with care.
Nearly 15 years ago, that intention started on a backpacking trip. While building the concept for Nocturne, Scott and Nicole found themselves walking through a question most people don't stop to ask: why does this matter?
At the time, not everyone understood the vision. Restaurant owners thought it was a crazy idea to pay for live music, and jazz clubs thought they were crazy for focusing so deeply on the guest experience. But somewhere along that trail, they landed on a belief that would define everything that followed. 11 years later they have built an amazing experience unlike anywhere else in the city.

And they built from there.
Because hospitality, at it's core, isn't just about food and service- it's about creating space for people to live their lives. A place for so many types of special occasions, all that can be shared and celebrated at Nocturne.
"It's a calling," they told me. And they way they make you feel when you are at Nocturne, you believe them.
What's striking isn't just the philosophy (or stunning interior) - it's how deeply it shows up in the details.
Not the obvious ones. The ones you're not supposed to notice. Minutes and hours of attention, every single night. All so the guest never has to think about any of it.
That's the point.
And maybe that's why, when I asked about a moment they felt truly taken care of, there wasn't just one answer, it was everything.
Nicole talks about how hospitality has shown up for her in so many ways through out her life: a multi-course meal with exceptional wine, a cousin leaving a simple glass of water by the bed, her grandmother making cookies for no reason at all. All of these things are foundation of hospitality.
Because at the end of the day, that's what this industry is built on.
Care, repeated. Details, practiced. People, remembered.
